Chef Fern Aracama holds class on Xmas cooking

Rarely do I attend cooking classes at The Maya Kitchen because of the early call time, but I will be there this Saturday, Nov. 23, to see well-known Chef Fernando Aracama do his demo from 9am to 1pm. The place: The Maya Kitchen Culinary Center at the 8th Floor Liberty Building, 835 A. Arnaiz Avenue (Pasay Road), Makati City.

Chef Fern will share a few precious recipes that will be useful to us this Christmas. On the menu: the Spanish inspired Patatas Riojana, a very simple yet hearty and delicious potato and chorizo soup; Grilled Ensaimada Media Noche style, hot and crusty butter grilled ensaimada stuffed with Chinese ham and queso de bola; Insalata Uvato, a salad with honey balsamico vinaigrette, toasted pine nuts, green and red grapes and kesong puti; Malunggay and Mozzarella dip in a creamy, cheesy brûleé best served with crispy crostini; and Bunuelos and Warm Chocolate Dip for dessert. These are deep fried choux pastries served with a thick and smooth milk chocolate dip.

Chef Fern hails from Bacolod and is a graduate of the University of the Philippines with a degree in Hotel and Restaurant Administration. He took further studies at The New England Culinary Institute in Montpelier, Vermont USA and was a 2003 Cochran Fellowship Program Awardee at the Hilton College, University Of Houston, Texas, USA.

Chef Fern has a long list of bars and restaurants to his name like Aracama Filipino Cuisine, Opus, Republiq & Café Republiq, MYTHAI Kitchen, Lucky Niku Café, The ChopHouse, The Tides Hotel Boracay as well as previous spots Restaurant UVA, Encore/Embassy & Member’s Only and CANTEEN simple+good food.

He is also active in World Association of Chef Societies (WACS), Les Toques Blances Philippines, Council of Chefs, United States of America’s Department of Agriculture and is a Chef Consultant with Philippine Airlines.

Heritage cooking at Maya Kitchen on June 29

On June 29, Saturday, 9am-1pm, The Maya Kitchen presents the women of the Reyes culinary clan in a cooking demo showcasing dishes with Tagalog and Pampango influences, all slow cooked and worth passing on down to the next generation.

Well known chef, author, editor and host Nancy Reyes Lumen is joined by her mother Nena Tancinco Reyes, sisters Marian, Corito and May as they prepare recipes perfected by the venerable Reyes matriarchs Lola Asiang Reyes and ‘Ina’ Maria Tansinco.

Nena Reyes is a mother of 12 who lovingly prepared Sunday lunch for her loving husband, Handy and her large brood. She will show how to cook the clan’s favorite soup, the Kinulob ng ‘Ina.’

Nancy Reyes Lumen calls herself a practical cook with her forte and culinary passion pegged on Adobo. This time, however, Nancy will prepare Mechado, the Lola Asiang way, using an unbelievable amount of shallots and over ripe tomatoes. The cut of beef is Kampto which will require hours and hours of slow cooking. The sauce (Sofrito) alone, without the beef, is already a great dish by itself.

Marian Reyes is the natural born cook with exceptional taste buds who can create recipes from scratch and duplicate the elders’ dishes perfectly. She will prepare Ina’s Adobong Manok sa Beer.

Corito Reyes is the sporty daughter who is into mountaineering, fishing and was once a tennis champion. She will do her version of Pastel de Lengua.

The youngest of the 12 siblings, May Reyes Serrano, is known for her Kesovore Spread. This time she will prepare her mother’s Pochero using her homemade cured bacon.

This is one person I’d like to meet, and am glad The Maya Kitchen is making it possible. Catch renowned Chef Sandy Daza share his favorite recipes for Shepherd’s Pie, Crispy Fish with Garlic Sauce, Shrimp Puttanesca, Spam Fried Rice, Coq Au Vin and Bread Pudding in a special cooking demo at The Maya Kitchen in Makati City on November 24, Saturday, from 9am to 1pm.

The place can easily get full so I suggest you sign up now. Chef Sandy is busy with a lot of things, among them managing his own resto Wooden Spoon in Katipunan Avenue, hosting Kitchen Confidence which airs every Saturday on Cignal TV and writing his food column in the Inquirer. His array of credentials include a degree in hotel and restaurant management from Cornell University in New York. He also attended Ecole Cordon Bleu and the American University both in Paris, France and went to Mandarin Hotel Cooking School on Thai Cuisine in Bangkok, Thailand. Yes, Sandy Daza was The Chef long before today’s babes-in-the-woods celebrity chefs came into the fore. Surely, I’d like to know from him such things as how to make darn good fluffy fried rice and how to whip up a good sauce for bread pudding. Am sure there’s a lot more cooking secrets he can share in the class.
