So we’ve heard about Green Pastures, the latest venture of Chef Robby Goco who is behind the successful Cyma Greek Restaurant Chain.It is a dining concept that features a unique farm to table cuisine featuring dishes that are created from all organic, local, original, with no antibiotics, vine ripened, unprocessed whole ingredients.

Learn all about healthy eating and today’s trend for organic gourmet cuisine in a cooking class that Chef Robby will teach at the Maya Kitchen this Saturday, September 28, 9am to 1 pm.

Learn to prepare the following dishes from the master himself:

Ricotta on Toast, Onion Jam and Roasted Garlic, Roasted Squash with Maple Onion and Mint, Young Goat Bolognese Pasta, Seafood Tioppino (stew), Cheesy Kale (salad),Honey Comb Dessert with Greek Yogurt and Lemon Curd.

Talking about Green Pastures, his latest food project found at the new Shang-ri La Mall East Wing, Chef Robby says:

“The philosophy behind Green Pastures is to have the taste of the food as the main focus. It is to offer food the way it is supposed to be.

The food is not your usual bland, lackluster organic kitchen offerings but rather food of exceptional taste presented in the most creative ways. It is like gourmet organic with the restaurant offering duck, roast beef, chicken cooked slow for as long as six hours.”

The chef uses lardon and has rillette on his menu. He pulls his own cheese and what he cannot produce on his own, he sources from reliable suppliers.

Chef Robby is a graduate of the California Culinary Academy. He owns and operates a total of eight Cyma Greek Taverna restaurants in Greenbelt 2, Shangri-la Plaza Mall, Trinoma, Eastwood Mall, Robinsons Place Ermita, Robinsons Magnolia, Ayala Mall Cebu and D’Mall Boracay. His latest venture, Green Pastures is on Level 4, East Wing, Shangri-la Plaza Mall.

On Saturday, Aug. 31, get acquainted with the concept of a “no borders cuisine” through a one-of-a-kind demo at The Maya Kitchen by Chateau 1771 Group of Restaurants’ executive chef and chief operating officer Vicky Rose Pacheco.

She will teach her class how to cook and prepare the following dishes:

Lemon Chicken from Chateau 1771 -crisp fried organic chicken leg nuggets coated with honey-lemon sauce

Salbacho Pizza with toppings of salami, bacon and chorizo – a staple from Sidebar

Fresh Smoked Fish Spring Rolls, a fresh lumpia of tinapang bangus, salted egg, mustasa, onions and tomato from Sentro Restaurant

Lacquered Salmon, a grilled salmon steak with soy sauce and honey reduction, mashed potatoes with parmesan from WineBar

Café’s Bread & Butter Pudding, a brioche type bread baked in a luscious custard with butter and real vanilla bean.

The first Chateau 1771 opened its doors in Malate in 1988 and has since relocated to its present location in Greenbelt 5. Its patented “No Borders Cuisine” is a blend of well-loved Swiss, Italian and French favorites.

Chef Vicky first joined Chateau 1771 as Assistant Restaurant Manager in December 1988 and has since occupied several positions as Restaurant Manager, Executive Chef and Food and Beverage Manager.

She graduated with a Bachelor of Science in Hotel and Restaurant Administration from the University of the Philippines then got a Food and Beverage Diploma at the Les Roches, in Bluche-Montana, Switzerland.

On June 29, Saturday, 9am-1pm, The Maya Kitchen presents the women of the Reyes culinary clan in a cooking demo showcasing dishes with Tagalog and Pampango influences, all slow cooked and worth passing on down to the next generation.

Well known chef, author, editor and host Nancy Reyes Lumen is joined by her mother Nena Tancinco Reyes, sisters Marian, Corito and May as they prepare recipes perfected by the venerable Reyes matriarchs Lola Asiang Reyes and ‘Ina’ Maria Tansinco.

Nena Reyes is a mother of 12 who lovingly prepared Sunday lunch for her loving husband, Handy and her large brood. She will show how to cook the clan’s favorite soup, the Kinulob ng ‘Ina.’

Nancy Reyes Lumen calls herself a practical cook with her forte and culinary passion pegged on Adobo. This time, however, Nancy will prepare Mechado, the Lola Asiang way, using an unbelievable amount of shallots and over ripe tomatoes. The cut of beef is Kampto which will require hours and hours of slow cooking. The sauce (Sofrito) alone, without the beef, is already a great dish by itself.

Marian Reyes is the natural born cook with exceptional taste buds who can create recipes from scratch and duplicate the elders’ dishes perfectly. She will prepare Ina’s Adobong Manok sa Beer.

Corito Reyes is the sporty daughter who is into mountaineering, fishing and was once a tennis champion. She will do her version of Pastel de Lengua.

The youngest of the 12 siblings, May Reyes Serrano, is known for her Kesovore Spread. This time she will prepare her mother’s Pochero using her homemade cured bacon.

” Renowned chef J. Gamboa of Cirkulo Restaurant puts on a different hat as he takes on Thai cuisine as guest chef of The Maya Kitchen on May 25, Saturday, 10am-1pm.

Chef J. Gamboa will be joined by Chef Malichat of Azuthai Restaurant. Cirkulo and Azuthai are parts of a chain of restaurants that includes Milky Way at Rockwell Power Plant and V-Mall Greenhills;  Azuthai, Tsukiji and Milky Way Café all at the Milky Way Building, 900 Arnaiz Avenue corner Paseo de Roxas, Makati.

The two chefs will demonstrate popular Thai dishes like Tom Yum Goong (Hot and Sour Prawn Soup with Lemongrass, Kaffir Lime Leaves and Fresh Coriander); Goong Pad Prik Kratiem (Chili Garlic Prawns); Geng Kew Wan Gai (Green Chicken Curry); Pla Naeng Ma Naw (Steamed Apahap with Lime, Fish Sauce Garlic, Coriander and Chili) and Khao Niao Ma Muang (Mango with Sticky Rice).

Chef J. Gamboa belongs to a family of restaurateurs led by Malu A. Gamboa who runs the restaurant chain.  He is a graduate of the University of Massachusetts at Amherst and the Culinary Institute of America, Hyde Park, New York.  He is Executive Chef of his family-owned restaurants Cirkulo, MilkyWay, Tsukiji and Azuthai.

Chef Malichat is a native of Nakhon Sawan, Thailand and has worked in 5 star hotels in Germany, China, Pakistan, Ukraine and in Thailand for over 20 years.
